Marshmallow Rocky Road

Description

There’s no need to miss out on your favourite treats this Christmas – just give them a healthy makeover. Try this Marshmallow Rocky Road from the über talented Mummy Made It. It’s a healthy alternative that is perfect for gifting to friends and family.


Ingredients

  • 1 egg white
  • 200ml warm water
  • 2 tbsp gelatine
  • ¾ cup maple syrup
  • 5 tbsp cacao
  • 3 tbsp arrowroot
  • 3 cups of rocky road treats (I use a mixture of my homemade biscuits, desiccated coconut, dried fruit, nuts and top quality chocolate chunks)

Instructions

  1. To make marshmallow, place the egg white in a clean bowl and beat with a mixer until soft peaks are formed. Set aside. Meanwhile, dissolve the gelatine in 100ml of warm water (this will take approximately 5 minutes). Add the remaining 100ml of water to a saucepan with the maple syrup and slowly bring to the boil. Once it's boiling, add the gelatine mixture and stir until it's well combined.
  2. Back to the egg white, with the beaters running on a medium speed, gently pour the hot gelatine mixture in (it’s best to pour it down the side of the bowl to avoid deflating the egg white). Once combined, turn the speed up to high and beat for 5 minutes. Finish by sifting 2 tbsp of cacao over the mixture and beat for another 6-8 minutes, or until the marshmallow is thick and fluffy.
  3. Fold in the rocky road treats and then pour the mixture into a lined tray. Leave at room temperature for a minimum of 4 hours before cutting into cubes. Combine the remaining cacao and arrowroot in a bowl and once you've cut the marshmallow, toss the cubes lightly in it - this will prevent them from sticking.
  4. Store in an airtight container at room temperature for up to 3 days.

Notes

  • Gelatine is a powerhouse of amino acids - especially important if you're looking for strong hair, good skin, energy and my personal favourite, a well-functioning digestive system. When the gelatine is being digested, it naturally binds to water. This process helps to push food through your digestive tract and keep it nice and healthy.
  • Note: buy the best gelatine you can afford. I buy this one -Green Lakes Gelatine as the cows are grass fed and don't live their life in feed lots.
