Description

This Slow Cooker Sausage & Gnocchi Soup is the ultimate easy dinner.
It’s hearty, budget-friendly, and made with real food — no packets, no fuss.
Just dump it in and let the slow cooker work its magic.

Ingredients

1 onion, finely diced
4 cloves garlic, minced
500g pork sausages or mince
1 tbsp ground fennel or seeds
1 tspn garlic powder
800g-ish dried, shelf-stable gnocchi (or fresh)
1 bunch of kale, shredded
400g tomato passata
2 heaped tbsp tomato paste
1-litre broth
1 tspn S & P
To serve:
50g parmesan cheese


Instructions

STEP 1: In a hot pan, cook off the onion and garlic until coloured and then add to the slow cooker.

STEP 2: In that same pan, break up and fry off the pork sausages that you have pulled the casing off, with the herbs and S & P; when done, pop that in the cooker.

STEP 3: Shred the leaves of the kale stalks and add to the cooker with the mince and another pinch of S & P.

STEP 4: Now pop the gnocchi* and sauces with the broth and give it a good stir until it is well combined. Leave it to cook on Low for 5 hours, High for 3 or Pressure Cooker for 13 mins.

STEP 5: When ready to go, give it a taste and ensure the seasoning is ok. Go ahead and grate the cheese over the top and enjoy.

* If the gnocchi is from the fridge or homemade, only add it at the end too.
** Leave the gnocchi out of the pressure cooker and stir through at the end. It will turn to mush if you add it in before.
