Bacon & Cheese Superfood Quiche

Description

This recipe was written for the great team at Bakers Delight. Save time and calories by swapping pastry for Bakers Delight bread in these delicious little quiches. They’re perfect for the kids’ lunchboxes too.


Ingredients

  • 6 slices Chia Omega-3 bread
  • 2 rashes bacon
  • 1 large kale leaf
  • 3 eggs
  • 12 cherry tomatoes, quartered
  • 30g cheese, grated
  • 1 tbsp chia seeds
  • 1 tbsp butter, melted
  • Salt & pepper for seasoning

Instructions

  1. Preheat oven to 180°C. Lightly grease 6 muffin holes with a little butter. Then, using a rolling pin, roll out each slice of bread until thin and remove the crusts. Line the muffin holes with the bread.
  2. Finely slice the kale and bacon and pan fry until crispy. Meanwhile, beat the eggs and add the cherry tomatoes, grated cheese and finally the kale and bacon to the mix. Stir until well combined.
  3. Pour the egg mixture into the bread cases, being sure to not over fill. Top with a sprinkling of chia seeds before placing in the oven to bake for 15-20 minutes or until set. Allow to cool slightly in the pan before removing to completely cool on a wire rack.
  4. Serve with veggie sticks or a side salad.

Notes

  • Bread is a great, quick option when you're looking to make quiche, look for a whole wheat, no preservative option. This quiches can also be made with no bread at all, just oil the muffin tin and pour the egg mixture straight in.
