Choc-Hazelnut Gingerbread Men

Description

The idea to make these little gingerbread men came to me when I was rolling the mixture in to the standard 'bliss balls'. I thought, why not get the babe involved and I'll flatten these out so that he can use a cookie cutter to make his own! Have fun with these, choose whichever shape you like and be sure to make a double batch, the 'nutella' taste will have you hooked.


Ingredients

  • 1 1⁄2 cups roasted hazelnuts
  • 6 Medjool dates
  • 1⁄4 cup raw cacao
  • 1 tsp vanilla bean powder
  • 2 tbsp maple syrup
  • 1⁄4 cup coconut oil
  • 1⁄4 cup mixed nuts, seeds and goji berries (for decoration)

Instructions

  1. Place all ingredients (except those needed for the decoration) into a food processor and pulse until they form a thick mixture.
  2. With your hands, press the mixture together and then mould them into 2cm high rounds so you can easily cut the shapes out with a cookie cutter.
  3. Have fun decorating these, I like to finely chop nuts and seeds to decorate the men.

Notes

  • These beauties taste just like Nutella but they are made without any processed sugar. They have the added bonus of being full of protein from the nuts and great hydrating fats from the coconut oil.
