The idea to make these little gingerbread men came to me when I was rolling the mixture in to the standard 'bliss balls'. I thought, why not get the babe involved and I'll flatten these out so that he can use a cookie cutter to make his own! Have fun with these, choose whichever shape you like and be sure to make a double batch, the 'nutella' taste will have you hooked.
1 1⁄2 cups roasted hazelnuts
6 Medjool dates
1⁄4 cup raw cacao
1 tsp vanilla bean powder
2 tbsp maple syrup
1⁄4 cup coconut oil
1⁄4 cup mixed nuts, seeds and goji berries (for decoration)
Place all ingredients (except those needed for the decoration) into a food processor and pulse until they form a thick mixture.
With your hands, press the mixture together and then mould them into 2cm high rounds so you can easily cut the shapes out with a cookie cutter.
Have fun decorating these, I like to finely chop nuts and seeds to decorate the men.
