Choc-Hazelnut Gingerbread Men

SERVES 20 | PREP 5 Mins | COOK 20 Mins

The idea to make these little gingerbread men came to me when I was rolling the mixture in to the standard 'bliss balls'. I thought, why not get the babe involved and I'll flatten these out so that he can use a cookie cutter to make his own! Have fun with these, choose whichever shape you like and be sure to make a double batch, the 'nutella' taste will have you hooked.


  • 1 1⁄2 cups roasted hazelnuts
  • 6 Medjool dates
  • 1⁄4 cup raw cacao
  • 1 tsp vanilla bean powder
  • 2 tbsp maple syrup
  • 1⁄4 cup coconut oil
  • 1⁄4 cup mixed nuts, seeds and goji berries (for decoration)


  • Step 1
  • Place all ingredients (except those needed for the decoration) into a food processor and pulse until they form a thick mixture.
  • Step 2
  • With your hands, press the mixture together and then mould them into 2cm high rounds so you can easily cut the shapes out with a cookie cutter.
  • Serving Suggestion
  • Have fun decorating these, I like to finely chop nuts and seeds to decorate the men.
