If you're after a quick, healthy dessert grab your slow cooker and make my baked apple. It's like your own individual apple crumbles, only easier.

Here's how to make a batch...

***PIN THE RECIPE HERE***

Core the apples and pop them in your slow cooker.
Using your fingers, like you would a crumble, mix the butter into your crumble mixture and set aside.
Now press the crumble mixture into the holes of the apples and top with a little extra butter! Top up with the water and pop the lid on to cook.
And done! Serve with ice cream.

Description

My take on cheats apple pie is great in the slwo cooker.  This recipe is fantastic for weeknights, dinner parties or even making for a weekend breakfast. It will take just 25 minutes using the pressure cooker setting, or 7 hours using the slow cooker on low, or 3 on high.

Ingredients

  • 4 apples
  • ½ cup whole oats
  • ¼ cup desiccated coconut
  • ¼ cup sultanas
  • ¼ cup hazelnuts, roughly chopped
  • 2 tbsp butter + extra for greasing
  • 1 tbsp coconut sugar
  • 1 tspn ground cinnamon
  • 2 tbsp water

Instructions

  1. With a knife or an apple corer, remove the cores and set the apples aside.
  2. Combine the remaining ingredients in a bowl, stirring until well combined.
  3. Firmly press the oat mixture into the centre of the apples until full and scatter the remaining oat mixture around the bottom of the cooker and the water too. Bake for 25 minutes using the pressure cooker function, 7 hours on low or 4 hours on high using the slow cooker setting.
  4. Sprinkle with a little extra cinnamon and a generous dollop of ice cream or Greek yoghurt.

Notes

If oats aren't your thing, switch them out for quinoa flakes.
