1-hour Meal Prep of High-Protein & Low-Calorie Recipes For a Busy Mum

I’ve noticed that when I get busy, I tend to reach for the easiest options for breakfast and lunch — and let’s be honest, those quick fixes aren’t doing me any favors. My dinners? They’re always on point. But breakfast and lunch? Not so much.

So this week, I decided to make a change. I set aside just one hour to prep some high-protein, low-calorie meals that I could rely on for my busiest days. And guess what? I’m feeling way more on track already.

In that hour, I whipped up Tzatziki Chicken Bowls, Juicy Poached Chicken, a Salmon Dill Egg White Frittata, and even a sweet treat — my go-to Strawberry Fluff. All of these recipes are easy, filling, and keep me feeling satisfied through the day.

Ready to see what I made in just one hour? Let me show you how simple meal prep can be and why it’s been such a game-changer for my week!

Here’s a video of what I made:

  • Homemade High-Protein Berry Gummies

High-protein homemade gummies are a thing, and my kids LOVE them for breakfast. Made with eggs, butter, yoghurt and gelatin – all the good stuff. Grab your Thermomix (or a saucepan and a blender), because we’re making the most fun kids’ brekkie. These gummies are packed with real-food ingredients that shop-bought gummies wish they had.

  • High-Protein Baked Chocolate Pancake

    High-Protein Baked Chocolate Pancake

A healthy chocolate baked pancake, 10 portions, with 15g protein per slice, and my kids honestly think it’s cake! Winning. Grab a baking tray, because this is the brekkie that changed my Saturday monring cook-up. This one lives in our fridge from Sunday to Thursday. I pull it out, warm a slice, load it up

  • Slow Cooker Beef Mince Pie

    Slow Cooker Beef Mince Pie

Rich & easy slow cooker beef mince between two crispy sheets of puff pastry, big pile of peas, and don’t even think about this pie without tomato sauce. This is the pie I make when I want that proper bakery-pie feeling without the 2pm-slump aftermath. The slow cooker does all the flavour work while you’re

  • Healthy Carrot Cake Porridge Bake

    Healthy Carrot Cake Porridge Bake

If you’re into porridge, you’re going to love my easy, healthy take on it. Bake it! The ace thing about making a porridge bake is that you’re adding eggs to the mix (hello protein), spices (that’s the flavour) and carrots too – hellooooo veggies and more fibre. I make up a batch of this on
