I’ve noticed that when I get busy, I tend to reach for the easiest options for breakfast and lunch — and let’s be honest, those quick fixes aren’t doing me any favors. My dinners? They’re always on point. But breakfast and lunch? Not so much.

So this week, I decided to make a change. I set aside just one hour to prep some high-protein, low-calorie meals that I could rely on for my busiest days. And guess what? I’m feeling way more on track already.

In that hour, I whipped up Tzatziki Chicken Bowls, Juicy Poached Chicken, a Salmon Dill Egg White Frittata, and even a sweet treat — my go-to Strawberry Fluff. All of these recipes are easy, filling, and keep me feeling satisfied through the day.
