- 500 g good quality sausages (preservative free is ideal)
- 2 cups vegetables (I use a mix of carrot, celery and kale)
- 1 small onion (diced)
- 1/2 bunch basil (woody stalks removed)
- 400 g tin chopped tomatoes
- 400 ml broth or water
- 2 tbsp Italian herbs
- 2 tbsp tomato paste
- 2 tbsp balsamic vinegar
- 1/4 cup water
Instructions
- Grab a sausage and squeeze the sausage meat out of the casing. Roll into individual meatballs and repeat until they’re all done. Brown them in a warm frypan over a medium heat.
- Blend all other ingredients until a thick sauce is formed. This will likely take a few minutes.
- Cover the browned meatballs with the blended sauce and allow it to cook down for 15 minutes or until the meatballs are cooked through.
- As long as your sausages are fresh, these store great in the freezer or in the fridge for a few days. You can even make this recipe into a meal by adding some water and making it a soup or by adding a few spoonfuls of pasta.
Notes
- These healthy meatballs achieve their sweetness through the use of balsamic vinegar. This is much better for you than than the store bought versions that often use sugars and preservatives to build their flavour.
