Perfect Juicy Poached Chicken

Learning how to poach chicken has honestly been one of the highlights of my year.

Big call, I know — but hear me out. This has become my secret weapon for hitting my protein goals without the extra calories.

The best part? If I’ve got a kilo of this juicy poached chicken in the fridge, I can turn it into just about anything. The babes have it in their lunchboxes — on sandwiches or stirred through pasta. I’ll toss it into a hearty salad for lunch, like these Tzatziki Bowls and for dinner, I’ve lost count of how many times I’ve whacked it on top of my sourdough pizza bases (that I make in bulk!) and straight into the oven.

The real secret to perfect poached chicken is flavouring the water. If you’ve got broth, use it. I often make a batch in my slow cooker. Otherwise, I swear by the Sans Elk chicken stock powder — no nasties. Either will make the chicken taste next-level good.

Here’s how I do it…

Flavour that poaching liquid if you’re not using a chicken broth.

In with the chicken breasts and get that broth back up to the boil.

Lid on, heat off and leave it.

Then it is chop the chicken up, I do that when it is still warm so the knife really glides through.

I like to use it up in my tzatziki bowls for a great meal prep lunch!

The best part? If I’ve got a kilo of this juicy poached chicken in the fridge, I can turn it into just about anything. The babes have it in their lunchboxes — on sandwiches or stirred through pasta.

  • Total Time: 24 minutes

Ingredients

Scale

1kg chicken breasts

1 tablespoon chicken stock / bone broth powder

Enough water to cover your chicken, about 6 cups.

Instructions

In a saucepan pop on your water / broth / stock powder to come to the boil. Make sure you leave a good 5cm before the top of the bowl so that when you add the chicken, it does not boil over.

Once the water is boiled, pop in your chicken and bring it back to the boil. For me that is only 1-minute at most.

Then, turn it off.

Let it sit for 22-mins (crazy number I know, but it works) and the heat in the water will poach it to perfection.

When it is done, slice your chicken and store it in a glass container with a little of the liquid over the top, it stops it from drying out.

Use the leftover liquid in a noodle bowl for lunchboxes, cook rice in it, or just drink it for a yummy snack.
