My lemon and lime bunny tail recipe is cute, yummy and healthy. They’re a fun take on the traditional bliss balls the kids can make with you and gift for easter presents/

  • Total Time: 1 hour 15 minutes

Ingredients

Units Scale
  • 1 cup oats or quinoa flakes
  • 1/2 cup coconut butter
  • 1/4 cup maple syrup
  • 1 tbsp vanilla extract
  • 2 small limes (zested)
  • 1 large lemon (zested)
  • 1 cup shredded coconut (for rolling)

Instructions

  1. Place oats or quinoa flakes in a food processor and pulse until they reach the consistency of a fine meal.
  2. Add remaining ingredients (excluding shredded coconut) and pulse again until mixture comes together as a dough.
  3. Scatter shredded coconut on a large plate. Scoop spoonfuls of mixture and roll into small balls (bunny tails), rolling each in shredded coconut until well coated. Pop onto a tray lined with baking paper and refrigerate until firm.
  4. Enjoy!

Notes

  • Oats are packed with soluble fibre which helps to fill you up and keep you feeling fuller for longer. According to studies, the beta-glucan found in oats can help to satiate your appetite for up to 4 hours. It is also found to lower ‘bad’ cholesterol levels – a perfect excuse to whip up another batch of these, I say.
