Peach & Balsamic Pecan Salad

This Peach & Balsamic Pecan Salad has to be one of the easiest salad recipes to make for Christmas. It's healthy, quick and uses summer fruits which are so cheap and YUMMY at the moment.

 

 

Start with some rocket.

 

Coat your pecans.

 

Roast the peaches, bacon and pecans on the BBQ.

And bring it altogether, so easy!

Description

Peaches are in season, and boy are the delicious in this easy Peach and Balsamic Pecans Salad. Just turn the BBQ on and cook the peaches and bacon at the same time. They'll be done when the rest of the salad is ready to go too! SO QUICK!


Ingredients

5 peaches, halved
3 cups rocket leaves
100g bacon, crisped or ham 1cm slices
50g goat cheese or burrata
Pecans:
½ cup pecans
1 tbsp balsamic
1 tbsp maple syrup
½ tbsp oil


Instructions

Pop your BBQ on or a frypan on your cooktop on medium heat.

Halve your peaches and cook on a BBQ with bacon or ham strips.

Cook the bacon until crispy and the peaches until just softening.

Marinate the pecans, and when the peaches and ham are done, pop them on to crisp up.

To pull the salad together, pop the rocket on the bottom. Follow with the peaches, bacon and pecans. Top with the crispy pecans. Serve immediately.

Notes

Switch the peaches for apricots, nectarines or even strawberries! Just don't skimp on the pecans; they're the winner here.
