Slow Cooker Sausage & Gnocchi Soup

If you’re after a hearty, easy dinner that tastes like it’s been simmering all day (because it has), this Slow Cooker Sausage and Gnocchi Soup is IT. Think rich tomato broth, juicy sausages, soft pillowy gnocchi — all made with real ingredients, no fancy stuff, and barely any effort.

This one’s a total family fave in my house — the kind of meal that gets gobbled up without anyone asking, “What’s this?” 🙃 Plus, it costs way less than takeaway and fills everyone up. Tick, tick, tick ✔️

Here’s how I make this weeknight winner

Start by removing the sausages from the casing and browning them off in a well-oiled pan. Brown off the onions and garlic too...

Now is the easy part: throw all the remaining ingredients into your cooker. For this recipe, I use dried gnocchi off the shelf. If you want to use fresh stuff, just stir that through at the end.

And when it’s time to get the kale in, I strip the kale leaves and chop those and then finely dice the stalks so they get used up too!

Give it a jolly good stir, pop the lid on and enjoy the cooking smells! Gosh this one is GOOD!

To serve, it’s as easy as spooning it out and topping with parmesan. But if you’re using the fresh gnocchi kind, stir that through and pop the lid on for 5-mins and it’ll be softened perfectly.

This is a perfect recipe for one of my freezer dump bags too.

This Slow Cooker Sausage & Gnocchi Soup is the ultimate easy dinner.
It’s hearty, budget-friendly, and made with real food — no packets, no fuss.
Just dump it in and let the slow cooker work its magic.

Ingredients

Scale
  • 1 onion (finely diced4 cloves garlic, minced500g pork sausages or mince1 tbsp ground fennel or seeds1 tspn garlic powder800g-ish dried, shelf-stable gnocchi (or fresh)1 bunch of kale, shredded400g tomato passata2 heaped tbsp tomato paste1-litre broth1 tspn S & PTo serve:50g parmesan cheese)

Instructions

  1. STEP 1: In a hot pan, cook off the onion and garlic until coloured and then add to the slow cooker.
  2. STEP 2: In that same pan, break up and fry off the pork sausages that you have pulled the casing off, with the herbs and S & P; when done, pop that in the cooker.
  3. STEP 3: Shred the leaves of the kale stalks and add to the cooker with the mince and another pinch of S & P.
  4. STEP 4: Now pop the gnocchi* and sauces with the broth and give it a good stir until it is well combined. Leave it to cook on Low for 5 hours, High for 3 or Pressure Cooker for 13 mins.
  5. STEP 5: When ready to go, give it a taste and ensure the seasoning is ok. Go ahead and grate the cheese over the top and enjoy.
  6. * If the gnocchi is from the fridge or homemade, only add it at the end too.** Leave the gnocchi out of the pressure cooker and stir through at the end. It will turn to mush if you add it in before.
