Rich & easy slow cooker beef mince between two crispy sheets of puff pastry, big pile of peas, and don’t even think about this pie without tomato sauce.
This is the pie I make when I want that proper bakery-pie feeling without the 2pm-slump aftermath. The slow cooker does all the flavour work while you’re doing school runs and folding a mountain of washing. Or in my case, a Sunday Funday with the babes. When you’re ready to eat, you pop the pastry in the oven for 10 minutes and stack it up.
Best bit? No blind baking. No soggy bottoms. No fiddling with pastry cases. Just a proper mince pie feeling with about 10 minutes of hands-on effort. The Slow Cooker Meal Plan crew have been begging me to write this one up… so here we are.

The peas are non-negotiable in our house. Beyond that, this is where you can go proper Aussie pub feed:
Buttery peas (already in the recipe)
A big scoop of mash if the crew is extra hungry
Buttery corn cobs on a Sunday
Homemade wedges for a proper pub-feed vibe
Tomato sauce (I said what I said)
If you’re doing a weeknight dinner, peas and pastry is plenty. If it’s a Sunday situation, go the mash and corn too. That’ll be ace to re-invent the leftovers.
Can I swap things out?
Gluten-free – Grab GF puff pastry or skip pastry entirely and serve the mince over mash for a shepherd’s-style stack.
Wine-free – Sub the red wine for an extra ½ cup beef broth plus 1 Tbsp Worcestershire sauce. Non-negotiable depth.
Porcini-free – Sub for 200g finely chopped brown mushrooms. Not identical but still SO GOOD.
Sundried tomato swap – If you don’t have them, add another Tbsp of tomato paste. Close enough.
Different meat – Lamb mince works beautifully. Or a honking big brisket. Allow 8-hours for that. Chicken mince is a bit too delicate for the long cook.
Bigger crew – Doubles beautifully. Make sure your cooker can handle 2kg. Mine can… your mileage may vary.
Hiding veggies in the beef mince pie
This recipe is already a mumma-hack in disguise. The carrot, porcini and sundried tomatoes all melt right into the mince and the kids have no idea. Want to sneak even more in?
Grated zucchini (squeeze the water out first, add 1 whole one)
A tin of brown lentils (drained, adds fibre, stretches the mince)
A handful of finely chopped spinach just before serving

Yes, and this one is actually better the next day. Cook the mince, cool it, pop it in the fridge overnight. Gently reheat on the stove while the pastry crisps in the oven. Easiest weeknight dinner ever.
Can I use frozen puff pastry straight from the freezer?
Thaw for 10-15 minutes first so you can cut it cleanly. You don’t need it fully room temp though… a bit of chill actually helps it puff better in the oven.
Can I make these as proper pies in a pie maker?
Yes and I LOVEEE this idea. Use the cooked mince as filling with puff pastry base and lid. A Sunbeam pie maker gives you 4 pies in about 8 minutes. Perfect for lunchboxes the next day.
Can I freeze the mince?
Absolutely. Cool completely and freeze in portions for up to 3 months. Thaw overnight in the fridge and reheat on the stove. Cook fresh pastry on the day.
Leftovers & lunchboxes
The mince keeps beautifully in the fridge for 4 days, and honestly? Better on day two when the flavours have had a hang-out. I pop leftovers into my kids’ thermoses for school lunch with pasta or some sourdough on the side, and it feels like a treat.

Let me show you how to make a batch…
Brown the mince with the onion, this will help add LOTS of flavour.
After it has cooked for 5-hours on low, this is what you’re left with. Thick, yummy mince.
Your pastry will really puff up when it’s done.
Start with one of the pastry sqaures on the base, layer it high with the slow cooker mince.
Top with another piece of pastry. My son calls it the slow cooker burger – ha!
Brown the mince and onion in a well-oiled, large frypan over a high heat until there’s no pink left- this is where all the flavour starts.
Tip it into the slow cooker, then pop all the other bits in. Give it a good stir, and now the cooker will make it YUM.
Cook on low for 5 hours or high for 2. I bet you’ll smell it when it’s done; it’s that good!
When you’re happy with the mince, get going on the pastry. Line a tray with parchment paper and chop the puff pastry into quarters, brush with an egg wash, and scatter over the sesame seeds.
Cook it in a 200°C oven for about 10 minutes, or until puffed up and golden.
While the pastry is doing its thing, pop the peas on to cook.
Now if your mince is runny, you have two options. The first, pull out 1/2 cup of the liquid and whisk that with a spoonful of flour to make a slurry and stir it back in. Or, pop the lid off for the last hour of cooking and it’ll thicken up. I like mine a little runny, so it melts into the pastry.
To pull this together, you pop one of the pastry sheets on the bottom, a few generous spoonfuls of the mince, then a final pastry sheet on top. Peas on the side, and don’t be shy with the tomato sauce; it’s so good!!!
